The real problem

Bartending is not a bar trade. It is an oral archive of emigration.

The history of the cocktail was told from the United States. The other half was missing: the Cuban, Spanish and Venezuelan bartenders who professionalised the trade, founded associations and carried their recipes from country to country fleeing wars and revolutions. The move was to treat the bar as a historical source, not as scenery.
